What I Eat In A Day: Monday, February 8, 2021

7:55 AM: Mixed nuts + vitamins

When I have 8 AM dance classes, I like to eat a bit of mixed nuts before class to hold me over until I can eat breakfast. This batch from Kirkland has an assortment of cashews, almonds, pecans, and pistachios. Nuts are a good source of protein, so they help keep you full for longer!

Every day I eat my assortment of vitamin gummies, which include Biotin, D3, and Vitamin C. The Vitamin C gummies from Airborne are my personal favorite, since they’re pretty big, deliciously sour, the perfect level of chewiness, and the serving size is 3 gummies per day!

9:34 AM: Oatmeal + earl grey tea

As you will come to see, oatmeal is my go-to breakfast, and the way I make it rarely changes.

My oatmeal includes:

+ Quaker’s Quick 1-minute Oats

+ Vanilla bean protein powder

+ Almond milk

+ Peanut butter

Toppings:

+ Fresh berries (strawberries, blueberries, raspberries)

+ Granola

+ Hemp seeds ( & sometimes chia seeds)

+ Honey

To balance out the sweetness of the oatmeal, I paired it with a fresh cup of earl grey black tea. Black tea is also high in caffeine, which helps to get me through the day (to be truly honest with you, I had four cups of tea on this day).

11:15 AM: Protein bar

I’ve been trying to incorporate more protein into my diet, and protein bars are a simple way for me to do that. I’ve tried a couple different brands, but so far the Kirkland protein bars have been my favorite, especially the chocolate brownie and cookie dough flavors. Recently, I’ve been eating these before my second dance class at 12:30, since I don’t want to eat too much before, but still want to have some energy and sustenance.

1:58 PM: Korean hot dog + spinach

Today, my mom brought home Korean hot dogs from the Korean supermarket, and if you haven’t tried these before, you definitely should. The one that I had today was different than usual, since the batter was infused with squid ink. Not gonna lie, I’m not completely sure what squid ink does except give it a cool color, but it was very delicious. I paired it with a bit of spinach topped with Everything But the Bagel Seasoning to get in my veggie intake for the day.

5:27 PM: White peach

I got a little hungry around 5:30 PM, but since it was slightly too early for a dinner, I had some white peach as a snack to hold me over.

6:45 PM: Thai coconut curry soup

For dinner my mom cooked a Thai curry soup, which has been a recent favorite recipe within our family. This batch of soup included:

+ fish

+ shrimp

+ carrots

+ tofu skin

+ mushrooms

+ squash

This soup packed in a lot of nutrients and an amazing combination of flavors, and was a warm and perfect end to the day.

    1) Your photos look awesome! 2) I love that you kept each description short and sweet and provided readers with ingredients for the meals you make yourself — great touch! Maybe if in the future you use recipes that you find online to make some of the dishes, you can also provide a link to the recipes.
